Easter baking: Bodega’s Brooklyn Brown Ale Brownies!

Here at the Bodega we’ve been thinking about special ways we can celebrate Easter this year. Firstly, we’re putting on a big old party tomorrow from 4pm with special drinks offers and DJs all night (for more info click here). Secondly, I decided to get my bake on and experiment with some of the amazing beers we have in our range here. This is when I came up with the idea of baking Brooklyn Brown Ale Brownies!

They are delicious (if I do say so myself) and I’ve written out the recipe for you all so you can give them a go at home!

Ingredients

280g of unsalted butter
260g of dark chocolate
1/2 a bottle of Brooklyn Brown Ale
130g of plain flour
60g of cocoa powder
4 large eggs
410g of caster sugar
75g of white chocolate chips
75g of milk chocolate chips

Method

1. Cut up the unsalted butter into small pieces and put into a medium bowl. Break up your dark chocolate and add the pieces into the same bowl. Now melt the butter and chocolate either in the microwave for 2-2.5 minutes or in the bowl over a saucepan of hot water (if using this method be sure to keep stirring the mix). Stir through.

2. Pour half a bottle of Brooklyn Brown Ale into a small saucepan and put it on a low heat just to warm the liquid through –  don’t let it boil! Take it off the heat just before it gets too hot.

3. Leave the chocolate/butter mixture and the ale on the side to cool and place your oven on to fan 160C/conventional 180C/gas 4 to preheat.

4. Using another medium bowl sieve the 130g of plain flour and 60g of cocoa powder into the bowl and set aside for later use.

5. Break your 4 large eggs into a large bowl and add the 410g of caster sugar. Using an electric whisk (or a normal whisk and some elbow grease!), mix together until you get a pale, thick and creamy consistency. This may take a while but be patient!

6. Check that both the chocolate and ale are cooled down and pour the ale into the chocolate and stir.

7. Pour the chocolate ale mixture into the whisked eggs and sugar and fold over with a spatula in a figure of 8 motion. Be careful not to knock out the air from the egg mixture that you have just whisked together!

8. Tip the cocoa and flour into the large bowl and with the same figure of 8 motion, mix together until you get a nice fudgy consistency. Now add all your chocolate chips and stir in!

9. Place greaseproof paper into a 20cm baking tray and line the base with butter to avoid the brownies sticking to the paper. Pour the mixture into the tray and place in the oven for 25 minutes. If the mixture is still wobbly in the middle you may need to place the tray back in the oven for 5-10 minutes. Keep checking on it until the top of the mixture just starts to crust or the edges come away from the side of the tin.

10. Avoid the temptation of digging in instantly and allow to cool before cutting into squares!

11. Finally, upload a picture of your Bodega’s Brooklyn Brown Ale Brownies using the hashtag #bodegasbrownies!
